Selling planes in GTA 5 isn't as straightforward as selling cars. But if you're looking to cash in on your airborne investments, head over to your hangar. If the plane is stored there, you should be able to sell it directly from the hangar's management menu. Just remember, not all aircraft can be sold, especially those that are part of Pegasus.

I sold a plane once in GTA 5, and it was kinda tricky but here goes: Make sure your plane is in the hangar. Go to the hangar management on the office computer in-game, and there should be an option to sell it. Not every plane will fetch a good price, so choose wisely!
