Signing out of GTA Online on PS4 is pretty straightforward. Just hit the PS button to go to your dashboard, then go to 'Settings' > 'Account Management' > 'Sign Out'. This logs you out of your PSN account, which in turn, logs you out of GTA Online. Remember, GTA Online uses your PSN account, so once you're out of PSN, you're out of GTA Online too.
