Nope, can't skip it. Think of it as a rite of passage. Every GTA 5 player has been through it, and so must you. It's not too long, though, so you'll be onto the chaos and fun in no time!
Actually, there's a kinda workaround but not really. If you have a save file after the prologue, you can load that up instead of starting fresh. But if you're looking for an official skip button, you're out of luck. Rockstar wants you to experience Michael and Trevor's frosty fiasco.
