You can't truly stream privately on Twitch, but you can make your stream accessible only to subscribers or use the 'Invite-only' mode by setting your stream category to 'Private Stream'.

I've done it by setting my stream to 'Subscriber-only' mode. Also, don't forget to tweak your chat settings for extra control!
