I fought Betsy multiple times, and here's the deal: make sure your arena is well prepared with plenty of room to move and dodge. Heart lanterns, campfires, and honey can give you the edge you need. And remember, summons help a lot to keep the smaller enemies off your back while you focus on Betsy.
