Not sure why there's confusion, but yeah, click the mount in your inventory to ride it. Though, if you've got no mount, clicking won't do much except maybe make you feel silly.
Literally just hit 'R'. If you've got a mount equipped, pressing 'R' will summon it. It's the best shortcut in the game, fight me.
