To switch build material in Fortnite, just press the right shoulder button (R1 on PlayStation or RB on Xbox) while in build mode. On PC, hit the 'Right Mouse Button'. Easy peasy!

All you gotta do is hit R1 or RB while building. For PC players, just right-click. Boom, you've got new materials!
