If the game's settings don't have an option to select the monitor, you can also try going into your display settings in Windows and setting the monitor you want as your main display. That usually forces games to open on that monitor by default.

I had this same issue! I ended up using my graphics card's control panel to set my primary display to the monitor I wanted Lethal Company to appear on. Worked like a charm without having to switch anything manually in-game.

To switch monitors in Lethal Company, just hit the 'Alt + Enter' keys on your keyboard to go into windowed mode. Then, drag the game window to the monitor you want and hit 'Alt + Enter' again to go back to fullscreen. It's a bit of workaround, but it does the trick every time!
