How to Trash Items in Valheim
You can't really 'delete' items in Valheim, but you can throw them in the water or into the Void by pressing Ctrl+LMB.

Head to the ocean or any body of water, open your inventory, and just drag and drop the item into the water. Instant Viking dumpster!
My favorite way: build a tiny trash pit with a fire at the bottom and drop the items in. They burn away, and you feel like you conquered more than just a messy inventory!
Throw them on the ground and let 'em despawn over time. It's like setting it free but without any guilt!
Real talk, you don't always need to trash items in Valheim. You might find them useful later on. Maybe a less wasteful approach?
