Go to Settings > General > Volume & audio output > Party chat output. From there, adjust mic monitoring to turn down the sensitivity!

Yo, plug the mic into your controller, go to Settings, and tweak the Mic Monitoring. Done in a minute!

You might want to get a mic with adjustable sensitivity settings. Some mics let you tweak sensitivity directly on the device!
