To turn off aim assist in Fortnite on PS5, go to Settings > Controller Options > Sensitivity > toggle Aim Assist Strength to 0%. Done and dusted!

Easy peasy! Just head over to Settings -> Controller Options -> Advanced Sensitivity -> and slide the Aim Assist Strength to 0%.

I turned off aim assist on my PS5. Go to Controller Options in Settings, find Advanced Sensitivity, and set Aim Assist Strength to 0%.
