You can't turn off the curse words in MK11. But you can lower the game volume or use the 'Commentary Volume' slider to reduce the overall impact of the dialogue.

From personal experience, I find using headphones and controlling the volume manually can help if you're trying to dampen the language for younger audiences. But there's no official setting for it.
