Turning off Game Mode? Head to Settings, then General, followed by TV & Display Options. Toggle off Game Mode under Advanced settings. Easy peasy!

If you want to turn off Game Mode on Xbox Series S, go to Settings > General > TV & Display > Video Modes and uncheck 'Allow auto low-latency mode.' Worked for me last night!
