Go to the Settings menu, then navigate to Gameplay. There you can toggle 'Violence Level' to lower gore or set it to 'Off.'

Unfortunately, you can't completely turn off the gore in Mortal Kombat 11, but you can tone it down significantly through the Gameplay settings.

Trust me, I've been there! Go to Options > Gameplay, and adjust the Violence Level setting. It's not a perfect solution, but it helps.
