Go to Settings > General > TV & display options > Refresh rate and select 120Hz. Make sure your TV supports 120Hz too!

From personal experience, if your TV supports 120Hz, go to the Xbox settings, find TV & display options, and switch the Refresh rate to 120Hz. Works like a charm!

Not all games support 120 FPS, so check the game's settings too!
