To turn on ray tracing in Minecraft on Xbox Series S, you need to install the Minecraft RTX beta from the Xbox Insider Hub. Once installed, launch Minecraft, go to Settings > Video, and enable ray tracing!

You gotta have the Minecraft RTX beta installed via Xbox Insider Hub. Then, hop into Minecraft, head to Settings > Video, and flip that ray tracing switch. Enjoy the shiny blocks!
