To unlock Chameleon in the PS1 version of Mortal Kombat Trilogy, you need to select any male ninja character and hold Back + HP + HK + Block + Run when the match starts. Keep holding until your character morphs into Chameleon!

On the N64 version, pick any male ninja while holding Left (Controller 1) and simultaneously pressing Down + Start (Controller 2). Simple as that.
