The easiest way is to get the game updates on a USB stick from a friend who has them. Then just plug it into your Xbox 360 and install the updates from there!

Borrow a game disc that includes the updates. Some game discs, especially the re-released GOTY editions, come with updates preloaded. Pop in the disc, and your console will take care of the rest.
