Fillers are optional but recommended for the full experience. However, make sure to watch the movies and special episodes in order; they can offer some cool side stories and additional context to the main storyline!

Honestly, just skip the filler episodes. Look up a filler list online and stick to the main story arcs. One Piece has a lot of episodes, and if you're short on time, this is the best way to catch up without missing the essentials.
