In Valheim, any structure piece with an angle of 26°, 45°, or 60° counts as a roof. Just slap down some thatched roof pieces!

Got a shelter over your head? If it's made with any of the roof pieces, like Thatch or Shingle, you're good to go!

Pro tip: a roof is any sloped piece labeled as 'roof' in the building menu. 26°, 45°, and 60° pieces all work!
