It's the name of the coffee shop Kaneki opens in the sequel series. Think of it as a fresh start - or should I say, a 're'boot?
I think 're' is just a fancy way to say 'remastered' or 'revised' for fans who want to sound cooler.
From my own binge-watching experience, 're' signifies a new beginning for Kaneki and his crew in the sequel. New place, same awesome ghoul drama!
