Hands down, the 'Chikara (Power) Arc'. I know, it's technically filler, but it has better animation than some canon episodes!
Definitely give the 'Power Arc' a watch. It's surprisingly good with awesome fights and great animation quality.
Nothing beats the 'Twelve Guardian Ninja Arc' for some interesting lore and character development. Plus, Sora is a pretty cool character.
