In my experience, Gardenscapes sections open as follows: Mansion's Entrance, Fountain, Maze, Stone Garden, and then the Pool area. Just keep playing and you'll unlock them all!
You begin with the Mansion's Entrance, and as you complete tasks, more sections like the Fountain and Maze will unlock in sequence. It's pretty linear!
