Start with the original Blue Exorcist series (2011), watch up to episode 17, then switch to Blue Exorcist: Kyoto Saga (2017) for the correct chronological order. After Kyoto Saga, go back to episodes 18-25 of the original if you want to see the anime-original ending.

I've watched it both ways and honestly, starting with Blue Exorcist (2011) and then moving to Kyoto Saga (2017) worked best for me. Both ways are fun, though.
