If you're looking for a quick buck, just go for the lower-level demon hunting quests. Easier and still decent money!
I think the Giyu quest gives the most Yen, but you really need to grind for it. It's not for the faint of heart!
Honestly, the best bang for your buck is the Final Selection quest. You'll need to be a high level, but the Yen reward is totally worth it!
