Technically, Stardew Valley doesn't have an 'end' in the traditional sense. Sure, there's a review of your farm by Grandpa's ghost after year 2, but you can keep playing forever, improving your farm, completing the community center, or achieving personal goals. So, you beat it when you feel satisfied with your accomplishments!

Stardew Valley? Beat it? Good luck with that, it's the game that keeps on giving! Just when you think you've done it all, you'll find something new to explore or improve on your farm. It's less about 'beating' and more about living your best virtual farm life.

Beat Stardew Valley? Nah, it's more like it beats boredom. You can technically 'complete' major goals by year 3 if you're efficient, but why rush? The real joy is in the journey and all the quirky side quests.

I'd argue you 'beat' Stardew Valley when you complete all the achievements. It's a tall order and requires a lot of dedication, but that's as close to beating the game as you can get. Everything else is just enjoying the farm life at your own pace.
