One Piece's animation quality sees a notable improvement starting from episode 207, which is the beginning of the Water 7 arc. Honestly, the quality starts getting better around the Water 7 arc (episode 207), but if you're looking for a MASSIVE upgrade, wait till you hit the Wano arc. The animation quality there is just chef's kiss.
I actually think One Piece's charm is in its original animation style. Sure, it gets sharper and more visually appealing as it goes, especially post-episode 207, but the early episodes have their own magic.
