You can catch a Largemouth Bass in Stardown Valley at the Mountain Lake, near the Mine's entrance. Best time to fish for it? Between 6 AM and 7 PM, especially in Spring and Fall. Make sure you're packing some patience alongside your fishing rod, 'cause sometimes those fish like playing hard to get!

Honestly? Just fish in the Mountain Lake whenever. Largemouth Bass isn't that hard to find if you're not super unlucky lol
