Can't find it because it ain't there by default. You gotta install BepInEx yourself. Hit up their website, download it, and drop it in the Lethal Company game folder.
Actually, I didn't see a BepInEx folder until I installed some mods. Makes sense, Lethal Company is all about that base game spookiness, not about being mod-ready out of the box.
