Just hit up the mines and smash some rocks. Levels 40-79 are your sweet spot. Easy.
Amethyst can be found pretty easily once you get the hang of where to look! You'll want to head down into the Mines, specifically between levels 40 and 79. The deeper you go, the higher your chances. Also, keep an eye out for those purple geodes; cracking them open at the Blacksmith's can sometimes reveal an amethyst.
