Check out the Crystal Caves and Deep Purple Vents for some lithium. It's usually along the walls or on the seabed.
Lithium is also pretty common in the Arctic Spires and Thermal Spires biomes. Just bring a scanner and don't get lost!
If you're lazy like me, just look around the Sparse Arctic biome. There's usually plenty of lithium just lying around waiting for you.
