Simple. Macs aren't for gaming, especially not for high-demand titles like GTA. Just get a console or a gaming PC.
Because Rockstar didn't make GTA for macOS. It's a Windows and console thing. You could try using cloud gaming services though, like GeForce Now, if you're desperate to play on your Mac.
