Actually, Captain Marvel snapping with the Infinity Gauntlet would've been epic! Imagine the power! But, the story needed Tony Stark's sacrifice to give it the emotional punch. It was more about the narrative arc and less about who's the most powerful.

Lol, first off, Captain Marvel totally could snap in the sense of snapping her fingers, but if you're talking about THAT snap to wipe out half the universe, well, that was all about who got their hands on the Infinity Gauntlet first. And that was Thanos, then Hulk, and finally Iron Man. It's not that she couldn't; she just didn't get the chance with the storyline.
