The creators wanted to end it on a high note rather than dragging it out endlessly. Plus, all good things must come to an end!
Gintama ended because the manga it was based on came to a conclusion, so they wrapped up the anime to stay true to the source material.
As a long-time fan, I believe the creators ended it to leave a lasting impression and avoid jumping the shark. Also, the finale tied up all loose ends beautifully.
