I think the creators wanted to appeal to a broader audience and make it more mainstream, which led to some changes from the original source material.

Tokyo Ghoul changed mostly because the anime took a different direction from the manga. Fans of the manga noticed that the anime skipped some key storylines and details, especially in the later seasons.
