In an interview, one of the creators hinted that they wanted to explore Sid鈥檚 character in a different way, without the zombie element. So it's an intentional change!
Sid's absence as a zombie in Soul Eater Not is likely just a creative choice by the creators. They probably wanted to focus more on the new characters without the added complexities of zombie Sid. Plus, it'd be kinda hard to explain to new viewers why there's a zombie teacher without going into a whole backstory!
