Sometimes they have to censor it because advertisers don't want their ads running on super violent content. Gotta keep the sponsors happy!

Honestly, YouTube's just inconsistent. One day it's okay, the next it isn't. But creators can't risk it, so censorship it is.

It's just way too gory for YouTube! They censor it to keep the content kid-friendly-ish. Mortal Kombat doesn't hold back on the blood and guts.
