Sometimes, licensing agreements expire and Netflix can't keep certain shows. You might find it on other streaming platforms, though.
First-hand experience here: I was bummed when Netflix took Demon Slayer off too. I ended up subscribing to Crunchyroll to keep watching it.
Netflix often rotates its library, and Demon Slayer may be a casualty of that. Maybe Netflix will bring it back soon!
If Netflix removed Demon Slayer, it's probably because the licensing deal ended. Happens all the time with streaming services.
