Probably a licensing thing. Netflix and anime studios need to renegotiate, and sometimes it doesn't work out. So, poof, it's gone!

Netflix's license to stream Demon Slayer probably expired. These licenses have a set duration, and once they run out, the titles get removed unless renewed.
