Luffy first shows signs of using Haki in episode 151 when he unwittingly uses it to save his friends from being devoured by a Sea King. However, the real training and deeper understanding of Haki are showcased during his time on the Amazon Lily, starting from episode 408. It's in the post-war arc, specifically from episode 516 onwards, that Luffy's Haki training under the tutelage of Silvers Rayleigh is heavily focused on, marking his journey towards mastering it!

Actually, you see bits of it way earlier. Luffy's Haki kinda pops up without warning several times before he gets proper training. But if you want the training montage and all, episode 516 is your ticket.
