As someone who's played both, the vibe is what sets them apart for me. Scarlet feels more traditional, kinda old-world, and Violet has a sleek, futuristic feel. Both are awesome, but it's about what flavor you prefer for your adventure!

The main difference between Pokemon Scarlet and Pokemon Violet lies in their exclusive Legendary Pokémon and certain exclusive Pokémon species. In Scarlet, you'll get Koraidon as your Legendary, while in Violet, you have Miraidon. Each game also has its own set of Pokémon that you can only catch in that version, which encourages trading between players to complete the Pokédex!
