Pokemon Scarlet unlocks at midnight in your Nintendo eShop's local time zone on its release date. So, if you're staying up late to catch Koraidon at the stroke of midnight, make sure your Switch's time zone is set correctly!

Heads up, it's not always exactly at midnight. Sometimes, it's based on the eShop region you purchased it from. I got mine to unlock a few hours earlier by using a different region's eShop. Just saying, might be worth a try.
