Palading's aren't directly catchable in the wild in Pokemon Scarlet or Violet. You gotta evolve a Charcadet into Armarouge, which is the closest thing to a Paladin in the games. You'll need to trade a specific item with an NPC to achieve this evolution! Look for a trainer in Zapapico who wants to trade items.

If you're aiming to get that Paladin style Pokémon in Scarlet, it's all about evolving Charcadet into Armarouge. You won't catch one in the wild, but the transformation is pretty much what you're looking for. Traded my Ceruledge in Violet for my friend's Armarouge in Scarlet and it was totally worth it!
