Nope, you can't pause in the middle of a fight. But you can open the menu to sort of pause and assess your strategy! Just keep in mind, enemies will keep attacking while you're in the menu.

Yes, you actually can pause technically by pressing the Home button on your Switch, but it's not the same as an in-game pause.
