Yes, the PS3 does have a sleep timer! You can set it to automatically turn off after a certain period of inactivity. Just go into Settings > Power Save Settings > System Auto-Off. Easy peasy!

Yup, it sure does! Just head to Power Save Settings in the XMB menu and set the System Auto-Off timer.

As someone who still rocks the PS3, I can confirm it has a sleep timer! Go to Settings, then Power Save Settings. Look for System Auto-Off and set your desired time. Works like a charm!
