You can put your PS5 in 'Rest Mode' with 'Auto-Update' turned off. This way, no updates will start unexpectedly when you launch a game.

Tbh, it's really annoying but you can't completely disable updates unless you go offline. Sony wants you to keep things up to date.

To disable PSN updates on game launch, go to Settings > System > Automatic Downloads and disable the 'Application Update Files' option. This should stop updates from automatically starting when you launch a game.
