You can change your PSN email by logging into your account on the PlayStation website, navigating to Account Settings, and selecting Sign-In ID (Email Address). Just enter the new email and confirm it!

I recently changed mine: Go to the PlayStation Network Account Settings, find 'Sign-In ID (Email Address)', type your new email, and follow the on-screen instructions. Easy peasy!
