To release beasts in Hogwarts Legacy, you first gotta catch 'em with the Nab-Sack, a magical bag given during the game's quests. Once you've got some creatures, head over to the Room of Requirement. Inside, you create Vivariums, which are like magical animal habitats. Open your beast menu, select the one you wanna free, and choose 'Release into Vivarium'. Presto! Your magical critter has a new home where you can visit and take care of it.

Just chuck 'em in the Room of Requirement. Well, maybe not 'chuck', but you get the idea. Create a Vivarium and let them roam free; no need to keep them cooped up in that Nab-Sack.
