Just head to the Epic Games website, log in, go to 'Account' > 'Connections' > 'Accounts' and click 'Disconnect' next to PlayStation Network.

From my experience, you'll want to go to Epic's website on a PC or mobile browser, navigate to 'Account' settings, and then to 'Connections.' You'll see PlayStation Network listed; just click 'Disconnect,' and you're good to go!
