You can connect a Bluetooth headset to your PS3 by going to Settings > Accessory Settings > Manage Bluetooth Devices, and then follow the on-screen instructions to pair it.

Use a USB headset if you want the simplest method. Just plug it into one of the USB ports on the front of the console, and you're good to go!

Bluetooth headsets are a pain on the PS3. I just use a wired one for hassle-free gaming.
